Enzymes are delicate dynamos. Delicate because they are destroyed by temperatures over 118 degrees (some
by as little as 105 degrees), which means that they may not survive even light steaming. Dynamos because they are powerful
biochemical catalysts; they speed burning or building reactions in the body according to need. They are specialized proteins,
often with long complicated names ending in -ase.
Professor Jackson of the Department of Anatomy at the University
of Minnesota, has shown that rats fed for 135 days on an 80% cooked food diet resulted in an increased pancreatic weight of
20 to 30%. What this means is that the pancreas is forced to work harder with a cooked food diet. "Although the body
can manufacture enzymes, the more you use your enzyme potential, the faster it is going to run out..." wrote Dr. Edward

The digestive tract more slowly than raw food, tends to ferment, and throws poisons back into
the body. Colon cancer is second only to lung cancer as a killer in America and is related, in various ways, to eating enzyme-deficient
cooked food. Prolonged intestinal toxemia may manifest the following symptoms: Fatigue, nervousness, gasto-intestinal discomfort,
recurrent infections, skin eruptions, hormonal disturbances, headaches, arthritis, sciatica, low back pain, allergies, asthma,

sugar, diabetes. White blood cell count rises dramatically after ingesting a meal of canned or cooked foods ("digestive
leukocytosis"). Elevated WBCs are correlated to bacterial infection, inflammation and depressed immunity. Raw foods
do not produce this reaction. All raw foods contain exactly the right enzymes required to split every last molecule into the
basic building blocks of metabolism: Amino acids (from protein), glucose (from complex carbohydrates) and essential fatty
acids (from unsaturated vegetable fats).
Each of us receives a supply of enzymes at birth. The supply is NOT limitless;

Enzymes
are proteins that speed up or catalyze chemical reactions in living organisms. They are necessary for chemical action that

a living system. As organic catalysts, they are involved in, but not changed by, chemical reactions; and they do not alter
the equilibrium of those reactions.
By bringing the reactants closer together, enzymes can help make chemical
bonds weaker, thus helping reactions proceed faster than without the catalyst; making reaction many millions of times faster.
This is important since these "reactions" govern every function in your body including the destruction of microbes
and cancerous cells.
Without enzymes, metabolism would progress through the same steps, but would go too slowly
to serve the needs of the cell processes. After each enzyme process, the end products are used as raw materials
or substrate for another enzymatic activity.
There are basically two groups of enzymes namely the digestive enzymes
derived from botanicals and systemic/metabolic proteolytic enzymes derived mainly from animal products. Digestive enzymes
work on speeding up the breakdown of the food in the stomach while proteolytic enzymes help purity the blood, and they can
